Ingredients

  • 2 large yellow or white onions
  • 2 tablespoons salted butter
  • 1 pack instant ramen noodles
  • 1 carton (32 oz.) Kitchen Basics® Original Beef Stock
  • ½ cup shredded cheese such as Gruyère or Swiss
  • Ground black pepper to taste
  • Serve with crusty french bread

Caramelized onions + beef broth are the backbone of classic French onion soup, but we’re giving it a twist with ramen noodles for a quick weeknight dinner. Using yellow onions gives you that deep, rich flavor when caramelized low and slow, and Kitchen Basics Beef Broth keeps the soup base bold and hearty. Top it with crusty bread + melty Gruyère for the ultimate comfort bowl.

Prep & Cook Instructions

  1. Thinly slice onions. Melt the butter in a large saucepan over medium-high heat. Add the onions. Cook the onions, just stirring occasionally, until they are caramelized, about 30 minutes. Add a tablespoon of water from time to time, as needed, to help them cook more evenly.
  2. Once the onions are cooked down, add Beef stock and stir along the bottom of the pan. Bring it to a steady simmer and cook for about 10 minutes
  3. Add the noodles, give the ramen a stir, then cover and let simmer until it’s soft, about 2 more minutes. Transfer to a bowl and top with the grated cheese. Place it under the broiler or microwave it until the cheese is melted. Garnish with black pepper to taste.
