Quinoa is a wholesome change of pace from rice. Cooked in stock instead of water, it has a rich, savory flavor that is versatile to use throughout the week.
Prep & Cook Instructions
- Add quinoa and stock to a 2 or 3 qt saucepan. Bring to a full boil over high heat.
- Cover and reduce heat to low; simmer 12 to 15 minutes until most of water is absorbed. Remove from heat and let stand, covered, 10 minutes before fluffing with a fork.
Tips:
- To store, cool cooked quinoa, fluff with a fork, then freeze in 1-cup quantities in zip top bags and use within 2 months.
- To reheat 1 cup frozen quinoa in a microwave-safe bowl, add 1 Tbsp. Kitchen Basics® stock and microwave on HIGH 1 minute. Fluff with a fork and microwave in 30-second increments until hot, fluffing between each increment.
