Ingredients

  • Leftover turkey bones​
  • 2 large carrots​
  • 6 garlic cloves, smashed​
  • 64 oz (2 32 oz cartons) Kitchen Basics Unsalted Chicken Stock ​
  • 2 cups water​
  • 2 teaspoons salt​
  • 1 teaspoon black pepper​
  • 2 tbsp miso ​
  • 4 bok choy bulbs​
  • 14 oz thin rice noodles
  • Thinly sliced white onion, for topping​
  • Leftover turkey meat (cooked)​

Make yourself a steamy bowl of soup using your leftover Thanksgiving turkey! Start with our flavorful stock and add turkey meat, veggies, rice noodles and miso to add even more dimension to this unique and nourishing dish.

Prep & Cook Instructions

In a large pot, combine turkey bones, carrots, garlic, Kitchen Basics Unsalted Chicken Stock and water. Season with salt and pepper and bring to a simmer over medium high heat. Reduce the temperature to maintain a simmer and cover with a lid. Simmer for about 1 hour, until the broth is flavorful and slightly sweet. 


Discard the turkey bones. Depending on how flavorful your turkey started off with, you may want to mix in miso paste to give the broth some depth. Add the bok choy and allow it to cook until bright green and tender, 5 minutes.


While the soup is simmer, prepare the noodles according to the package directions. Drain the noodles and divide them into individual bowls. Top each bowl with thinly sliced white onions, leftover turkey, bok choy, and carrots. Pour the hot broth into the bowls and serve.
