Tortellini and Kale Soup with Chicken Sausage

  • 2 tsp Olive Oil
  • 4 Cloves Garlic minced
  • 1/2 Medium Yellow Onion diced small
  • 2 Small Carrots, peeled and diced small
  • 2 Stalks Celery, diced small
  • 1 tsp Kosher Salt
  • 1/4 tsp Pepper
  • 1 lb. Hot Italian Chicken Sausage
  • 6 Cups Kitchen Basics Original Chicken Stock
  • 5 Cups Kale, roughly chopped
  • 8 oz. Small Cheese Tortellini
  • Shaved Parmesan, for serving

This recipe is packed with fresh veggies including kale, tortellini and spicy chicken sausage to uplift the flavor. The foundation of the delicious and hearty soup is Kitchen Basics Original Chicken Stock which adds rich and complex flavor.

Prep & Cook Instructions

1. Bring a medium pot of water to a boil for the tortellini
2. In a separate large pot over medium high heat, sauté onions, garlic, carrots, and celery in olive oil with salt and pepper for 4-5 mins until veggies are almost tender 
3. Add the sausage and cook, 3-4 mins (until cooked through) breaking it into small pieces with your spatula
4. Add Kitchen Basics Original Chicken Stock and bring to a boil and then turn down to a simmer; cover and simmer on low for 5 mins
5. Stir in the kale and cook 1-2 mins until just wilted and tender (you don’t want to over cook the kale because it will lose it’s vibrant green color)
6. In the separate pot of boiling water, cook the tortellini 1-2 mins less than package directions, then drain
7. Add tortellini to the soup as you serve it (this way it doesn’t get soggy sitting in the broth) and top with parmesan cheese - enjoy!
